The best banana bread you'll ever taste.

I demand you all try this recipe.
I took a standard banana bread recipe and made it amazing.
CLARE'S AMAZINGLY DELICIOUS MOIST BANANA BREAD WITH LOTS OF GOOD STUFF
INGREDIENTS
4 eggs, lightly beaten
2 cups brown sugar. (You can use white, pure brown, raw sugar... whatever. I like the brown for it's lovely colour.)
1 cup of strawberries, roughly chopped.
1 cup of fresh cranberries, whole. (You can use frozen ones, that's what I used. If you're going to use dried, I suggest adding about another half cup of the strawberries.)
1 1/2 cup mashed bananas, ripe ones. (If the bananas when mashed end up being like 2 cups, that's okay. No more than 2 cups though.)
1 tablespoon orange zest
1 cup vegetable oil. (I used olive oil. Some say the taste is too strong for cooking with this, and you should use canola or whatever, but I fucking hate other oils. I use olive oil for everything, fucking everything. Fuck other oils. I suppose, for your weird low fat fuckers, you could use apple sauce... but no. Don't. Why did I tell you that. Apple sauce is meant for nothing. Use oil. Fuck low fat. Fattie shouldn't be eating fucking banana bread anyway.)
3 cups all-purpose flour
1 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup chopped walnuts (Or whatever nut you see fit. I made a sorta soft walnut brittle for some caraway and walnut shortbread cookies, and I still had some left in my freezer, so I just crushed that up and added it in.
1/2 cup of crystalized ginger. (Finely chopped into little pieces, you don't want big chunks. You can get the candied ginger, that would work too. Or if using fresh, grate in about 1/4 cup, not anymore, it'll be too strong and take away the flavour from the lovely berries.)
1 cup of raw sugar (For sprinking over top of the loaves or muffins before baking. Gives you a lovely crunchy top.)
Mix together your dry ingredients in a medium bowl. (Flour, cinnamon, nutmeg, salt, baking soda.)
In another bowl, a bigger one, mix together your eggs, and sugar first. Then the bananas. Then the oil. Then the strawberries, cranberries, and the ginger.
Mix in the dry ingredients and the nuts. Mix to moisten... then a bit more. You could over beat this, but I don't know how.
Grease with butter and flour whatever baking tins you're using. (Muffins, mini loaves, big loaves, cakes.... um... mini muffins....) I've made either 4 mini loaves and one big one, or 5 mini loaves and 24 mini muffins. They're so good. Mini muffins are my preference, but this recipe will make like 500 so I make a mixture.
Distribute batter. Fill just over half way.
You can add chocolate chips if you want. I didn't this time, I wanted nice fruity moist loaves. But if you add chocolate, this is a great dessert.
Before putting in the oven, sprinkle a nice even layer of raw sugar over top. It'll be so crunchy when done, it's sooooo lovely.
Bake for about an hour... maybe less, maybe more. You'll know. Insert a skewer, or toothpick to the bottom in the middle of the loaf or muffin and when it comes out clean, ie: not with gooey batter sticking to it, it's done. Also, you can be as pro as me (having worked in a kitchen for about 4 years and being a fat chick who loves to bake and wants to own her own bakery...) you can just tell when it's done by the feel of the loaf when you press the heel of your hand into it lightly. But y'all ain't so pro. Depending on the size of your pan, it'll be a different time for smaller things (less time) and for bigger things (more time).
Make this.
It's amazingly good.
If I wasn't going to be an artist HOW CLICHE I'd be a cook or a pastry chef. Dream? To open my own bakery/cafe some day.
With lots of lovingly baked good with delicious Salt Spring bud in them.
And we'd get so high.
Anyway, I'mma do it some day.
